Never let the contents of
the jar get below 1½ cups.
Every 2 weeks you may add
1 cup of sugar and I can of canned fruit in this order:
1 can sliced (halved) Maraschino
cherries (place a little liquid in now and then) 1 can sliced pineapple
Tidbits drained, 1 can sliced peaches (use #2 cans)
Original recipe.. (Starter)
Store in warm place 4 weeks
before using 1 cup each of each fruit: Maraschino cherries, pineapple
tidbits, sliced peaches, 3 cups of sugar, 1 cup of apricot Brandy.
Wonderful on vanilla ice

Essence Creole Seasoning:
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients
thoroughly.
Yield: 2/3 cup
Sprinkle on Chicken, Steaks,
chops, roasts....it really "kicks things up a notch"!

Pineapple: (To accompany meats - not a dessert)
1 cup sugar
l stick butter or margarine,
soft
l/2 cup milk
2 eggs
5 slices white bread, cubed
1 - 20 oz can crushed
pineapple or pineapple tidbits (do not drain)
Cream sugar and butter;
add remaining ingredients.
Bake in 8 x 8 dish at 350°F
for one hour, uncovered.
Great to take to a potluck
if you double the recipe.

Applesauce:
Peel, core and quarter tart
apples, like Macintosh. Put in large, microwave safe container and
zap on high until you can mush them up with an old fashioned potato masher.
This may take 5 to 10 minutes on high setting. Add sugar or sweetener
to taste while hot. Chill thoroughly before serving.

Pineapple Muffins:
Cream together...1/2 cup
margarine, 3/4 cup white sugar and 1 egg. Add 1 tsp. vanilla.
1 cup mashed bananas, 1/2
cup drained pineapple bits, combine and add to above mixture.
1 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt, combine and
add to above.
Grease and flour muffin
tin. Fill cups about 1/2 full. Bake for 25 min. in 375°
oven, or until golden brown.
Makes 18.

Boston Brown Bread:
This is a super fast, easy
brown bread. It looks involved because I chatter. Read it through
and you'll see what I mean.
You need a good-sized mixing
bowl. I make a double recipe. This is better if taken
from the baking container and wrapped while still warm in aluminum foil
and allowed to ripen for at least one day.
Set oven to 350 ° and
prepare 1 lb. coffee cans and/or soup cans, which have been greased with
your favorite product. Oil isn't good, as the baked product doesn't
slide out as well as it would if you use butter or Crisco or some solid
vegetable shortening.
Next Step:
1 cup boiling water which
you now pour over.....
1 ¼ cups diced dates
or dried fruit if you prefer, though the color brown comes from the browned
melted butter and dark dried fruit.
1 cup chopped pecans
2 Tbsp's. melted butter
1 ¼ tsp. baking soda
While the above is soaking
in the boiling water for a few minutes prepare....
2 cups flour, sifted
1 tsp. pure vanilla
1 cup sugar
2 eggs, beaten
Add the second group of ingredients
to the boiled water mixture and mix. I use a wire whisk, it goes
as fast as a mixer and less clean up. Be sure not to fill the
cans more than 2/3, as it rises nicely. Bake for 45 mins.
It depends on the size container and how much mixture is in the baking
mold, but testing after 45 mins will tell the tale.

Beep-tail Meatballs:
(
In more sophisticated crowds they are called Cocktail Meatballs )
2 lbs.
ground round
1/3
cup dried parsley flakes
2
Tbsp. soy sauce
1/2
t garlic powder
2
Tbsp. instant minced onion
1
cup corn flake crumbs
2
eggs slightly beaten
1/4
tsp. pepper
1/3
cup ketchup
Mix
all ingredients well and form into tiny meatballs quarter sized (or smaller
if desired).
Place
in single layer in 9 x 13 baking pan.
In
a sauce pan, blend the following ingredients:

16 oz. can of jellied cranberry sauce
1
- 12 oz bottle chili sauce
2
Tbsp. brown sugar - packed
1
Tbsp. lemon juice
Cook
over medium heat, stirring until cranberry sauce is melted and blended
with other ingredients. Pour over the meatballs and bake in 350°
F. Oven for 30 minutes. To serve, place on heated platter and insert
toothpicks if using as hors 'doeuvres.
Note:
You should get about 60 meatballs, depending on the size you make them.
