Lemon Velvet Ice Cream:

Juice from six lemons
4 cups sugar.  Mix these two good first slowly add 1 and 1/2 pints cream  (this is so cream won't curdle)
1 quart of milk ............Freeze
This recipe is a family one and is liked by everyone.

Caramel Apple Cheescake:

1can ( 21oz.) Comstock or Wilderness Apple Fruit Filling
1-9" or 10" graham cracker crust
2 pkg. (8oz) cream cheese, softened
1/2 cup sugar
1/4 tsp. vanilla extract
2 eggs
1/4 cup caramel topping
12 half pecans plus 2 Tbsp. chopped pecans

Preheat oven to 350°  Reserve 3/4 cup apple filling. Spoon remaining filling into crust.
Beat together cream cheese, sugar, and vanilla until smooth. Add eggs and beat well.Pour over apple filling. Bake 35 minutes or until center is set. Cool.

Mix reserved apple filling and caramel topping in a small saucepan.  Heat, about 1 minute. Arrange apple slices around outside edge of cheesecake. Spoon caramel sauce onto cheesecake and spread evenly.  Decorate with pecan halves around edge. Sprinkle with chopped pecans.  Refrigerate until ready to serve..Makes 8 to 12 servings  Fabulous! Very Gourmet.

Finnish Whipped Pudding (Viispipuuro):

3 cups pure grape juice
1/2 cup uncooked farina or cream of wheat
2/3 cup sugar
1/4 teasp. salt
Half pint whipping cream (Do not use substitutes) Whip and refrigerate until needed.

Heat the juice, salt, and sugar to boiling and sprinkle in the farina, stirring quickly to prevent lumping.  Lower heat and cook slowly, stirring constantly, for about 30 minutes or until farina is done.   Pour into large bowl and whip at highest speed on electric mixer until cooled, light lavender in color, and very fluffy.  Takes about 20 minutes.  Fold in the whipped cream until completely blended.   To serve, top with plain cream, whipped cream, or  you can use Cool Whip here, but the flavor isn't the same as with pure whipped cream.

Easiest Ever Peach Cobbler:

2 lb. peaches and juice (I use the big 28 oz. can and it works out well)
1 stick butter and 1 box yellow cake mix (butter recipe)
Pour peaches and juice into 13x9 inch pan. (Glass works best!)  Sprinkle cake mix (dry) over top. Slice butter into 1/4-inch slices and place over cake mix. Bake at 350° for 30 to 40 minutes or until browned.  Could this be any easier?  Top with whipped cream. And enjoy!!

Ouma's Mousse in Minutes:
(Ouma is South African for Grandmother)

1  box frozen strawberries
1/2  cup sugar
1  pint sour cream
1 teaspoon lemon juice

Mix all ingredients in electric blender or mixer until smooth. Put in shallow dish in freezer for a couple of hours  Stir and return to freezer to refreeze before serving
