recipe can ONLY be done in electric oven or a gas stove if it has electric
start.

oz. chocolate morsels

C. sugar

C walnuts chopped
Beat
egg whites and salt until they are stiff. Add sugar gradually and
add vanilla. Continue beating until VERY stiff. Fold in chips
and nuts. Drop by TBS. on greased cookie sheets. NOW...TURN
OFF OVEN. Put the cookies in the oven and leave till morning..Don't
even peek till then.

White Chocolate Ginger
Oatmeal:
2 1/2
cups(625 ml) oatmeal (not instant)

cup (250 ml) all-purpose flour
1/2
tsp. (2 ml) baking soda
1/2
tsp. (2 ml) salt
3/4
cup (175 ml) butter, at room temp.

cup (250 ml) brown sugar
1/2
cup (125 ml) granulated sugar

eggs
1
tsp. (5 ml) vanilla
12
oz (340 g) white chocolate chips
1/2
cup (125 ml) coarsely chopped pecans
1/4
cup (50 ml) crystallized ginger, finely chopped
1.
Preheat oven to 350°F (180°C). In a large bowl, stir together oatmeal,
flour, baking soda, and salt. In another large bowl. beat butter
with sugars until light and fluffy. Beat eggs into mixture one at a time
until blended, then beat in vanilla.

Gradually beat in oatmeal mixture until combined. Stir in chocolate
chips, nuts, and ginger until combined. Drop mixture by large tablespoons
a couple of inches apart onto greased cookie sheet. Bake in preheated for
8 to 10 minutes or until golden brown, set but not yet firm. Cool cookies
on rack. Makes about 3 1/2 dozen cookies.

Whipped Shortbread:
1 cup
soft butter
1/2
cup icing sugar (XXXX)

1/2 cup all purpose flour
1/2
cup corn starch
Candied cherries
Beat butter until light
( very light). Gradually add icing sugar.Beat well. Sift together
flour and corn starch. Gradually add to creamed mixture, beating
constantly. Drop by teaspoon. Roll and press lightly with floured
fork. Bake 300° F 25 - 30 min.
Do not brown. Yield:
( 4 Dozen ) Decorate with Candied cherries. I usually double the
recipe.
